Question: I have heard that you can bake cookies on a barbecue grill. Is that true or is someone playing a joke on me? – Linzi O. Athens, IN
Answer: Yes, Linzi, it is possible to bake delicious cookies on a barbecue grill if you set the grill up properly. In fact, we bake chocolate chip cookies almost every time we have a grill cooking demo.
Here is how we do it. Set up your grill for indirect cooking and preheat to 350 degrees. We like using a charcoal grill, but you may use any type as long as you can easily control the cooking temperature.
Next, install a raised grid that will allow you to position your baking pan about four inches above the grill’s cooking grid. Close the grill cover and let the temperature stabilize at 350 degrees.
Place your favorite cookie dough on a suitable cookie baking sheet or pizza pan and place on top of the upper raised grid. Close the grill cover and bake at 350 degrees for 10-12 minutes. Immediately remove from the grill and allow the cookies to cool before eating. Be sure to bake enough for everyone. These are so good they will go fast!

Question: I’m beginning to think about Christmas presents for members of my family. Which barbecue related gifts make the best gifts?  – Angie D. North Manchester
Answer: Angie just about any barbecue tool or accessory would be appreciated by most avid outdoor cooks as long as he or she does not already have one. Discreetly take an inventory of the existing “stash” of cooking utensils. Do any of their favorite tools need replacing? If so, make sure you purchase good quality replacements, not ones you find in an end of season close -out bin.

DePuy illegally marketing products

Warsaw based DePuy Orthopaedics has been warned by the Food and Drug Administration that is illegally marketing two orthopaedic products.
The FDA notified the Johnson & Johnson company on Aug. 19 stating DePuy is marketing a Corail Hip System for two unapproved uses and is promoting those uses online.
DePuy was also notified that is never received approval for the TruMatch Personalized Solution System which uses software and high-tech CT scanning technology to create a detailed, 3-D view of a patient’s knee so a surgeon can properly position a knee implant.
The FDA has ordered DePuy to stop selling the hip system for unapproved uses and to provide information that would be needed for the agency to approve the TruMatch system. “The FDA will evaluate the information you submit and decide whether your product may be legally marketed,” the letter stated.

Taste & Trade Expo: discounts for vendors

August 23rd, 2010Stacey Page

Showcase your business at the upcoming Taste & Trade Expo at a reduced rate. Warsaw/Kosciusko County Chamber of Commerce members and nonmembers both save at least $100 by registering for the expo before the Sept. 1 Early Bird discount deadline.
Also, as an exhibitor, there are even more savings. You can get your membership through the end of 2010 for free.
For the last three years the Warsaw/Kosciusko County Chamber of Commerce, along with the Kosciusko Economic Development Corporation, have created a venue that was designed as a community event to showcase the business community of Kosciusko County.
This year’s Expo will take place Friday and Saturday, Oct. 15-16, at the Orthopaedic Capital Center at Grace College. Nearly 100 exhibitors including retail, manufacturing, catering, services, not-for-profits and restaurants will showcase their goods and services at this one-of-a-kind event. Many of these companies’ sales have escalated as a result of their exposure from exhibiting at past Taste & Trade Expos.
By joining the chamber, businesses can contribute to the efforts to ensure the county remains a great place to do business. Your chamber does make a difference, and while membership in the chamber is voluntary, it is an essential tool to have a meaningful voice in the future of business in this county.
Download the Exhibitor Booklet at www.wkchamber.com, or call the office at 574-267-6311, ext. 224.
Platinum sponsors for the Taste & Trade Expo are Grace College, CenturyLink, Eagle Outdoor Advertising, Lake City Bank and The Papers.

Butterfly bush, Buddleia davidii, attracts clouds of butterflies but is also just a great garden plant. They are known for their long arching spikes of summer blooming fragrant flowers in white, pink, lavender and purple. The leaf color is a nice gray green.
Another species of butterfly bush, Buddleia x weyeriana, comes with yellow flowers. ‘Sun Gold’ is a common cultivar of the yellow form. The flowers are in bunches that look more like lantana but it is not be as winter hardy as Buddleia davidii.

Palm Psalms: The promise of hope

A sampling of Palm Psalms bracelets.

By Stacey Page

It was on a 6-hour road trip home from somewhere in Illinois when my best friend and I came up with a plan. Those who know us well will immediately think, “Uh oh. What are those two up to now?”
But let’s not be too hasty. Although Regina and I don’t always have the “best” ideas, we did come up with one that we hope will actually help people – children and adults – and yes, animals, right here in Kosciusko County.
Me, the forever beach bum wannabe, and she, the one always searching for guidance from a higher power, put our interests and our ambitions to help others together and came up with what is a perfect name for our venture: Palm Psalms. Yes, the logo is a couple of palm trees and yes, the purpose is to make money. The goal, however, is to right now help two local nonprofit organizations sustain their abilities to remain open and continue helping those in need.

United Way campaign kicks off

August 18th, 2010Stacey Page

Activities are underway for the United Way of Kosciusko County 2010 Campaign. The goal for this year’s United Way of Kosciusko County campaign has been established at $2.2 million.
While seemingly large on the surface and definitely higher than the $2 million raised last year, this goal still only represents a fraction of the nearly $8 million potentially available across Kosciusko County. Training is being conducted for United Way Volunteer Consultants calling on businesses and Key Leaders running campaigns at the local businesses.
The Pacesetters for this year’s campaign have been identified. These include Kosciusko Community Hospital, Mutual Bank, North Pointe Cinema, Par-Kan, Silveus Insurance and Zimmer. The downtown merchants included the United Way of Kosciusko County in their August First Friday event.

Question: What is your favorite food to prepare on the grill? – Dave W. Rochester, IN
Answer: Dave that’s a tough one to answer. I love cooking a lot of different foods on my smokers and grills, including steaks, burgers, chicken, vegetables, pizza and various deserts. But the one that my family asks for the most during the holidays is smoked ham.
Using a large meat injector, inject about 8-10 ounces of Honey Praline Injector liquid into several spots on the top, ends and sides of a 10 pound to 14 pound semi boneless ham ( I prefer the Cook’s brand). Using a sharp knife, gently score the top in a checkerboard pattern about 1/8-inch deep. Let the ham set in a drip pan for a few minutes while you set up the grill or smoker.
